Steam flying fish

STEAM FLYING FISH

You Will Need

4 flying fish cleaned & soaked in lime & salt
1 tablespoon Bajan seasoning - Eschalot, thyme, marjoram, parley, hot pepper
2 onions sliced
2 medium tomatoes sliced
1/2 teaspoon lemon or lime juice
1 teaspoon mustard
1 tablespoon melted butter
Salt & pepper to taste
Lemon or lime slices

Recipe

- Remove the fish from the lime and salt and wash thoroughly
- Season well with Bajan seasoning
- Fold each fish over, putting the tail through the mouth.
- Arrange in a well greased enamel plate, add a little boiling water, top with onion, tomato slices, a teaspoon mustard and a teaspoon pepper sauce then pour over the melted butter.
- Cover with another enamel plate. Steam until fish is tender.
- Serve with lemon slices.

CASSAVA PONE
Cassava Pone is a lovely dessert made from a staple food of the original inhabitants of the Caribbean. It's always a favorite.

You Will Need

3 cups or 11/2 lbs. dry cassava flour
11/2 cups sugar
1/2 tsp. nutmeg
1 large grated coconut
11/2 cups milk
Rind of 1/2 an orange
2 ozs. margarine
3 ozs. lard
1/2 tsp. mixed spice
1/2 tsp. salt
2 eggs
1 tsp. vanilla essence

Recipe

- Mix the dry ingredients together
- Add melted shortening, milk, beaten eggs & essence
- Put into a well-greased dripping pan.
- Bake in a moderate oven about 11/2 hrs.
- Glaze with sugar and water before baking.
- When baked cut into squares..

COU COU

You Will Need

8 medium sized okras
8 ozs. cornmeal
11/2 pints water
2 tablespoons butter or margarine
2 teaspoons salt

Recipe

- Wash & slice okras and drop into boiled salted water.
- Cook until okras are tender.
- Pour off and reserve about 3/4 of the water leaving the remainder in with the okras.
- Stir in cornmeal with coucou stick, pressing against the sides of the pot to remove any lumps.
- Gradually stir in remaining liquid a little at a time, stirring until mixture is thick and smooth.
- Turn into a well buttered bowl and serve with steamed flying fish.

FISHCAKES

You Will Need

1/2 pound of Salt Cod Fish
1 1/2 pounds of flour
2 oz. baking powder
3 tbs. fresh seasoning
1 hot pepper (chopped)
1 onion (finely chopped)
garlic
tyme
water
(
to make thick batter)

Recipe

- Boil the fish for about 15 minutes.
- Flake the fish into small pieces by hand.
- Combine and mix fish, onion and pepper.
- Add the flour, baking powder and water and mix to a thick batter.
- Drop by tbs. into hot oil and fry until golden brown and crispy.
- Drain on blotting paper. Serve Hot.

Makes about 35 large fishcakes.
